Ayam Pongteh / Stewed Chicken with Potatoes Nyonya Style /娘惹式豆瓣酱焖鸡肉和土豆
Ayam Pongteh or known as “stewed chicken with potatoes flavored with fermented bean paste” is one of the Baba Nyonya classic dish. It’s is best served with steam rice. There are a variation of Ayam Pongteh. Let’s check out Ah Chan’s Kitchen Ayam Pongteh.
Ayam Pongteh:
- 250g or 1 chicken thigh
- 1 1/2 tbsp chopped garlic
- 1 1/2 tbsp chopped shallots
- 1 medium size potato
- 1/2 tbsp palm sugar
- 1 1/2 fermented bean paste
- 1 bowl water
